Great mix of Mediterranean flavors

One of our favorite Vegan options. Lots of great flavors. Leaves you feeling nourished without being too much. We’re not strict vegan, and so we also like the option with chicken.

Vegan Caponata

This is one of my favorites. I love all the veggies. In fact, I want more. The quinoa is generous and could be cut in half. I am not vegan. If I were to make this meal myself, I would add chicken and double the veggies to make two meals.
