Olivia’s Steak Fajitas & Fiesta Green Bean Salad

It’s time to add some easy, healthy recipes into your rotation now that the hot summer months are here! Green beans are a great source of fiber and they are not high in carbs. Steak Fajitas

Makes 4 Servings

Ingredients:

  • 1 lb MightyMeals Flank Steak
  • 3 Bell Peppers, Assorted Colors, Sliced Thin
  • ½ White or Yellow Onion, Sliced Thin
  • 1 cup Sliced Mushrooms
  • ¼ tsp Chipotle Chili Powder
  • ½ tsp Cumin
  • 2 tbsp. Olive Oil
  • Optional: Corn Tortillas

Directions:

  • Preheat Oven to 350 Degrees (Optional. May Also Re-Heat Steak in Microwave)
  • In a Large Cast Iron or Oven Safe Skillet, Heat 2 tbsp. Oil over Medium High Heat
  • Add Onions and Sauté until Soft (About 5 Minutes)
  • Add Peppers & Mushrooms and Season with Cumin & Chili Powder
  • Sauté until Veggies are Beginning to Brown (About 10 Minutes)
  • Arrange Steak into Skillet with Veggies, Cover with Aluminum Foil, and Place into Oven for 10 Minutes
  • Optional: Finish with Fresh Cilantro and a Squeeze of Lime

Per Serving (1 Serving Fajita Veggies & Steak with 1 Corn Tortilla):

Fiesta Green Bean Salad

Makes 4 Servings

Ingredients:

  • 1 lb MightyMeals Green Beans
  • Juice of 1 Lime
  • 1tbsp Olive Oil
  • ½ tsp Salt
  • 1 tsp Dried Oregano
  • ½ Red Onion, Diced
  • ½ cup Fresh Cilantro, Chopped
  • 1/3 cup Cotija Cheese
  • ½ cup Cherry Tomatoes, Halved
  • 1 Avocado, Quartered & Sliced

Directions:

  • Cut Green Beans into Thirds (About 1 ½ inch in Length)
  • Place into Mixing Bowl with Diced Red Onion, Cilantro, Salt, Oregano, Lime Juice, & Olive Oil
  • Allow to Marinate for 1 Hour
  • Before Serving, Mix in Cherry Tomatoes, Top with Cheese, and Garnish with Avocado
